Our story
is deeply tied to the vision and artistry of Gael, our Chocolatier and Creative. With over 20 years of international experience, Gael has transformed his passion into an art form - from intricately designed chocolates to luxurious macarons and desserts. Trained at one of France’s most prestigious culinary schools, he honed his craft alongside some of the world’s most celebrated 2- and 3-Michelin-star chefs, including Jacques Chibois, Alain Lorca, and Michel Del Burgo.

Today, at La Factory,
Gael and his team merge creativity, precision, and passion to produce chocolates that are not only exquisite to taste, but also visually stunning.
Whether for large-scale corporate events, hospitality amenities, retail partnerships, or exclusive brand collaborations, our mission is to deliver exceptional, fully customizable chocolate solutions - from flavours and shapes to packaging and branding - with the flexibility and capacity to meet high-volume demands while maintaining uncompromising quality.
Gael’s journey has taken him from the kitchens of France to Moscow’s iconic Café Pushkin, from Paris’ elite pastry schools to Hong Kong’s dynamic dessert scene.
Along the way, he has introduced haute couture chocolate artistry to new audiences, earning acclaim in world-class competitions such as the World Chocolate Masters France and he was also selected for the contest of Meilleurs Ouvriers de France.
